
Casein glycomacropeptide protein (cGMP) in milk is produced by the degradation of the casein present, due to the effect of enzymes or bacteria, which most often occurs during the cheese making process. In this process proteases are used, which specifically break down the casein and produce cGMP. Therefore, the amount in the whey of these cheeses is very high and the increased concentration in milk is usually an indication of milk adulteration with these cheese whey.
Other degradation processes (often related to the activity of bacteria present in dairy products) are also capable of increasing cGMP concentration, but not as dramatically.

High specificity through monoclonal antibodies: The product utilises monoclonal antibodies specific to casein glycomacropeptide (cGMP), ensuring that the detection of the adulteration marker is accurate and selective.
The test is highly sensitive, capable of detecting levels of GMP that could indicate adulteration of 4 per cent cheese whey in milk. Indeed, if milking, storage, transport and processing conditions are optimal, this figure could be as low as 2 per cent or even 1 per cent.
Reliability proven by correlation with standard methods (HPLC): the results from the test strips correlate and match those obtained by HPLC (high-performance liquid chromatography) using molecular exclusion columns, and are even rated as more reliable than other methodologies in certain contexts.
In fact, the product is used in academic research to carry out confirmatory qualitative identification following analysis by HPLC and mass spectrometry, which reinforces its technical credibility within the dairy industry.

The result is easily interpreted by the appearance of a red band on the strip, which simplifies the inspection process without requiring complex instrumentation for qualitative identification.
